Fruit is handpicked on three separate days. The earlier pick provides the aromatics and a boost of natural acidity, whilst the latter two picks impart weight and texture. Whole bunch pressed and barrel fermented wild in French oak (25% new). Elegant and flavoursome, it tastes of grilled peach and flint, oatmeal and almonds. This wine is wonderfully balanced - the natural acidity, oak use and alcohol weight work in harmony, producing a fine chardonnay. Vegan friendly. Alcohol: 13% | Cellar: 7+ years
