Ámbar is the Spanish word for amber, however this is not a typical orange wine. This is an elegant take on an age-old technique. Whole bunches were fermented wild in amphora and left for 45 days on skins before pressing off. A few gentle stirs before being left to mature for 3 months in clay. Strikingly exotic, complex aromas: Turkish delight, sweet cherry and orange, rose petals with a spicy edge reminiscent of cinnamon. The palate is dry, soft and savoury with a delicious spiciness before finishing clean. A must try wine. The wine is made on-site by Jones, within 200m of the vineyard, using gentle methods of winemaking; allowing the fruit to speak for itself. Vegan Friendly. Alcohol: 12.5% | Cellar: 5-7 years
